    Mino Shirakawa Sencha:

    This tea is cultivated in Japan's highest tea plantation, where, despite challenging conditions on steep slopes, growers have safeguarded their plantation for 600 years, preserving tradition. Mino Shirakawa yields the finest tea leaves, rare and produced in limited quantities, meticulously processed into Sencha, also known as natural Gyokuro.

    Flavor Balance:

    The balance between theanine, a flavor component, and catechin, an astringent component, found in high-quality tea leaves, results in a rich, delicious flavor. The unique altitude, nearly twice that of other tea-growing regions, contributes to this balance. During the day, a significant temperature difference allows the amino acid theanine to be stored in the tea leaves instead of being utilized for growth at night. Additionally, river mist from the foothills moderately blocks sunlight, softening the tea leaves and reducing the production of excess catechins.

    Preparation:

    Brew 2 grams (1 teaspoon) of tea leaves in hot water below 60°C (140°F). Cold water brewing is recommended when possible, as theanine, a flavor enhancer, is better extracted at lower temperatures. Reheating is acceptable for warm, umami-filled Sencha, as the amino acid theanine is not broken down once the umami is extracted.

    Versatility:

    Sencha can be enjoyed not only as a straight tea but also in various applications. It pairs well with milk and blends seamlessly with herbal green teas like mint, lemon balm, dill, and rosemary, as well as spiced green teas like ginger and cardamom, and chocolate-flavored green teas.

    Certification:

    This product is JAS Organic certified, guaranteeing equivalence to US USDA and European Euroleaf organic standards. However, it carries only the JAS Organic mark.

    Storage Instructions:

    To prevent oxidation, fold the opening of the aluminum tea bag to release air thoroughly after opening the package, then fasten it with a rubber band or stopper. This method is more effective than transferring the tea to a can.
