Molasses is made from sugarcane grown in the Setouchi area and slowly boiled down over wood in a sugar factory deep in the mountains. Because it is in a liquid sugar state just before it is turned into brown sugar, it has a light flavor and contains all the components of sugar cane (minerals, iron, and B vitamins).

It can be used as a substitute for honey. It has a lighter taste than honey.
