    Mino Shirakawa Hojicha:

    This tea originates from the highest tea plantation in Japan, where, despite challenging conditions on steep slopes, tea growers have preserved a tradition spanning 600 years. Mino Shirakawa's finest tea leaves, rare and produced in limited quantities, are meticulously processed into hojicha, also known as "natural gyokuro."

    Characteristics:

    This tea boasts a harmonious balance of two components: catechin, commonly found in green tea and known for its astringent properties, and pyrazine, an aromatic component developed during the roasting process, offering a mild aroma.

    Preparation:

    Brew 2 g (1 tsp) of tea leaves in boiling water. For a milder flavor, cold water brewing is recommended. Hojicha is versatile and can be enjoyed straight or used in various recipes. It pairs well with milk, herbs such as mint, lemon balm, dill, and rosemary, as well as spices like ginger and cardamom. It also complements caramel and chocolate-flavored sauces.

    Certification:

    This tea is certified Gifu Clean Agriculture, grown without the use of pesticides throughout the growing season.

    Storage Instructions:

    To preserve freshness, after opening the package, fold the opening of the aluminum tea bag to release air thoroughly, then fasten it with a rubber band or stopper. This method prevents oxidation better than transferring the tea to a can.
