Did you know that green tea and black tea are made from the leaves of the same tea tree? Tea is fermented. Tea is not fermented by microorganisms, but by enzymes in the tea leaves that oxidize the polyphenols in the tea leaves while they are being rubbed.
The degree of fermentation also greatly changes the flavor, so the leaves of the tea tree are classified by six different colors in China to determine the type of tea when it is made into tea. Green tea, white tea, yellow tea, blue tea, black tea, and black tea. The left side is less fermented and the right side is more well fermented.
Black tea, by the way, is actually yeast fermented. Some teas are also fermented using fungi. Black tea is called Black Tea in English.
